Toffee Pecan Banana Bread

I can’t even begin to count the seemingly infinite number of banana bread recipes I’ve tried out over the years. Banana breads with yogurt, with banana breads with apple sauce, banana breads with mayonnaise, vegan banana breads, carrot raisin banana bread, and although they were alright for the most part, my quest for the perfect banana bread continued.

One day, I stumbled upon this strange recipe that called for banana bread batter mixed into a crumbly topping—something I’d never heard of. Could this be what was missing from all these other banana breads?


This moist, but reasonably dense banana breads is one of the best banana breads I’ve made yet. I took this great recipe for the Best Banana Bread (ever) and made a few alterations to make it my version of the Best Toffee Pecan Banana Bread (ever)! My favourite part is the toffee sprinkled on top. It adds a deliciously rich, caramel crunch to the bread.

I made two of these in mini loaf forms and one in a cake form. This fancy banana bread makes a fantastic gift and it’s easily transportable. You can wrap it up with parchment paper and tie it up with some ribbon or craft straw, or use some cellophane.


Toffee Pecan Banana Bread Recipe


Makes: 1 large loaf or 2 small loaves
Oven: 350 F

Ingredients

2 cups flour
1/2 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
1/2 cup unsalted butter, softened
1/2 cup brown sugar
3 eggs
3 ripe bananas
1/2 tsp vanilla extract
1 cup chopped pecans

Instructions

Beat butter until fluffy and add sugar, mix until well combined. Grate bananas and mix into butter. Add eggs one at a time, stir in vanilla.

In another bowl, sift together flour, baking soda, cinnamon and salt. Mix into wet batter and stir in pecans.

Reserve one cup of batter for topping.

Pour batter into loaf pan.

Topping


Ingredients

1 cup banana bread batter
1 cup flour
1 tsp cinnamon
1/2 cup brown sugar
Toffee bits
1/4 cup chopped, toasted pecans (optional)




Instructions

Preheat oven to 350 degrees F.

Mix flour, cinnamon, sugar into 1 cup of banana bread batter.

Carefully and evenly spread the mixture on top of the batter in the pans. I found using an offset spatula was very helpful.

Sprinkle the extra pecans onto the top along with a few tablespoons of toffee bits.

Bake for about 1 hour and 20 minutes if baking one large loaf. An hour is sufficient if making smaller loaves.

Remember to let it cool before cutting into it. Enjoy!
