Day two of my Christmas goodies countdown. Today, we have one of my all-time favourite treats for any time of the year: English Toffee. This delicious treat is not only super easy to make (and almost impossible to mess up!), but it is SO much less expensive than buying a bar or two from Purdys. Before I found this recipe, I’d spend $4-$5 on a single bar of English Toffee. It was delicious and worth every penny for that delicious toffee goodness, but seeing how easy it is to make, I just can’t justify spending $5 when all the ingredients combined to make a whole tray cost that much. 

This is an extremely easy recipe for the Best Toffee Ever. I got this recipe from Allrecipe.com.

Easy English Toffee


Makes: about 1.5 full trays

Ingredients


2 cups butter

2 cups granulated sugar

1/4 tsp salt

2 cups semisweet chocolate chips

1 cup chopped nuts



Directions


Prepare two baking sheets lined with parchment paper.

Using a large saucepan, melt the butter and slowly add the sugar and salt. Cook over medium heat until the ingredients have all melted together. Allow the mixture to come to a boil and cook until it turns a dark amber colour (if you’re using a thermometer, about 285F).

Once the toffee has reached the right temperature, pour it out onto your baking sheets wait about a minute and then sprinkle on the chocolate chips and carefully, gently spread them around until you’ve smoothed it over the entire surface. Sprinkle on your nuts evenly (I used almonds, but you can also use hazelnuts, dried fruit, pecans, etc.).

Let the toffee solidify. You can leave it out on the table (which is what I did) or you can stick it in your fridge. Once cooled and solid, break it apart with your hands or chop it into pieces with a knife.

Next step? Presentation! Presentation is key with any food. The better it looks, the better people will think it is! Although this toffee is delicious and can speak for itself, it’s always nice to jazz up your baked goods when gifting them. Here are a few ideas on how to present your beautifully baked Christmas goodies.



1. Gift boxes: You can get these beautiful boxes or cookie tins from places like Michaels or any dollar store. Section them off with waxed cardboard or corrugated plastic. 



2. Cookie Jar: The jar makes a great little gift and your Christmas treats will look great in one! Top it off with a bow or some holiday ribbon. 



3. Cellophane: Probably the simplest method of wrapping up your goodies. Just a little cellophane, ribbon and tape and you're good to go. You can also twist up your cellophane in a cone shape for a little something different.
